Recipe for "Sis From the USA"

I had a request from "Sis From the USA" for the Sticky Toffee Pudding....my cooking disaster of last week.

This is the recipe as I received it from England. The changes in red are mine.

Sticky Toffee Pudding

Makes enough for 1 large oval dish or 2 casserole sized dishes.

4 oz soft margarine
12 oz caster sugar (I used C&H Baker's Sugar...ultrafine pure cane sugar)
2 eggs
1 lb self raising flour (be sure it's just 16 oz.!)
1 x 8 oz packets of dates ( I used 8 oz. package of chopped dates)
1 teaspoon bicarb soda ( I assumed this is just regular baking soda. Anyway, that's what I used!)
1 pint boiling water

pour boiling water over the dates – leave to soak overnight or for a few hours (I let them soak overnight but 3 or 4 hours is long enough...I think!)

cream the margarine & sugar together until white & fluffy

beat eggs gradually into the mixture (perhaps add a spoonful of flour in with each egg to stop it curdling)

fold in the flour (Remember! no more than 16 oz.)

add the bicarb of soda to the water + dates & stir

Add the waters / water to the mixture whilst slowly mixing (scrape the date ‘bits’ off the mixer and add in to the pudding mix!!)

Bake at 180 c. for about 40 mins or until brown & firm to touch. (Depending on ovens, cooking times could be 30 mins – 1 hour – just keep an eye on it!!)

(Baking temperature of 180 c. is 350 degrees Fahrenheit)

Sauce

8 oz butter
1 lb brown sugar (NOT demarara but the dark brown sugar)
1 pint double cream (double cream is not found in the US. Closest thing is heavy whipping cream.)

put all ingredients into a saucepan & slowly bring to the boil (boil until sauce is consistency of condensed milk)

Prick the pudding all over
put as much of the sauce on as possible
serve the rest of the sauce in a spare jug to pour over the pudding at the table

put the pudding back in the oven for about 5 mins

I went to the store to get the ingred. for the pudding. I've got a question about the heavy whipping cream. The only thing I could find was heavy whipping cream in a can that you have to squirt out....like a topping. Is this what you used? sis from the usa (love your blog)

No, Sis! I used the whipping cream in a carton...use it like you would milk from a carton. Let me know how it turns out!
